Wine Update: Bottles and Barrels
So, Operation Vinegar seems to be back on track. I guess the problem was that I let it dry out for too long. After filling it with water again, it eventually stopped leaking. The culture/water/ wine mix (1/1/3 parts) is back where it should be and covered with a cheesecloth. The instructions say to feed it by adding more wine in a couple of months. We’ll see how it goes.
Also, I found a new wine store, on the advice of my friend Gail. To stock up on some fortified wines for my next Society of Wine Educators class, we headed over to Lafayette and the Wine Thieves. Now, I didn’t find everything I was looking for. Rod, who was quite helpful, said they didn’t have much demand for Sherry, Marsala, or Madeira. But I found plenty I wasn’t looking for. My most interesting find? A rose’ of Pinot Noir from the Pfalz in Germany.
Of course, you’ll hear more about the vinegar as it progresses, barring any more disasters, and I’m sure I’ll drink one of my purchases soon.

They’re once a month, always on a Wednesday usually 2nd or 3rd week, depending on what’s going on at the winery. You might like July’s class about barrels and oak influence on wine. One of the winemakers is going to assist.
