I made the Mediterranean Potato Salad tonight — with a few twists — and it was delish! Instead of black olives I used kalamata ones, added some smoked paprika, a little balsamic vinegar to the olive oil, and I mixed it all up and put it in the freezer to cool. The b/f was suspicious at first (as he is about anything Med — my fav cuisine!), but he agrees it’s grubbin. A ‘07 St. Supery Dollarhide Sauvignon Blanc provides the perfect herbaceous, grapefruit-tinged complement. Thanks for posting this recipe, Farley! :-)

    Megan,
Glad you liked it. I definitely approve of your upgrades, as I love kalamatas and blasamic vinegar is a staple around here….
